Ever heard of a sandwich cake? Each country has a dish they are best known for and the Swedish as best known for their sandwich cake. This cake comprises of ingredients you would normally find in a sandwich -simply put, it’s a sandwich that comes in the form of a cake. There are many recipes on how to make different sandwich cakes from vegetarian, seafood sandwiches and so much more. Here, we are going to show you how to make a simple sandwich cake. This cake is incredibly easy to prepare, and you can use as many of your favorite ingredients as you wish. Many of us think of cakes as just being made strictly of sugar, butter, flour, and eggs – this is definitely not how the Swedish do it. Let’s take a look:
Preparation and cooking time: 30 minutes to 45 minutes
Yield: 12 servings
- One packet ranch seasoning
- Three 8 ounce packages cream cheese at room temperature
- 1 1/4 cups of mayonnaise
- One large white boule
- Two tablespoons of mustard
- Four thin slices of Cheddar
- 4 ounces of thinly sliced deli ham
- 4 ounces of thinly sliced deli turkey
- Four strips of cooked bacon
- 2 cups of shredded lettuce
- One medium size sliced tomato
- 1/ 2 cup of prepared chicken salad
- I cucumber – preferably very thinly sliced on a mandolin
- 1 cup of your favorite potato chips
Before you begin your preparations, ensure that your kitchen is equipped with a mandolin and a piping bag with a star tip.
Step 1: In an electric hand mixer (or a stand mixer); beat together ranch seasoning, 1 cup of your mayonnaise, and the cream cheese. You want the mixture to be easily spreadable so ensure you get all the lumps out. When the mixture is ready, put one-third of the mixture into a piping bag with a star tip and leave the rest for later.
Step 2: It is time to tackle the boule. Trim the sides of the white boule using a serrated knife until you achieve an even cylindrical shape. Cut the cylinder across its radius into four 1-inch slices.
Step 3: Select the serving platter you want to use and place a slice of your sliced boule in the center. This will be the bottom layer of your cake. It’s advisable to put a clear parchment underneath the bread to keep the serving platter and kitchen countertops clean once you begin icing.
Step 4: Spread 1 tablespoon of mustard onto the top of the bread. Next, place 1 slice of cheddar, 1 slice of ham and 1 slice of turkey and finally top it off with half of the lettuce.
Step 5: Take another piece of bread and spread the remaining 1 tablespoon of mustard on one side. Place this slice of bread on top of the lettuce with the mustard side facing down. Cover the top of this piece of bread with two tablespoons of mayonnaise.
Step 6: Place the four pieces of bacon, the sliced tomato and all remaining shredded lettuce on top. Next, take the third piece of bread, and spread remaining two tablespoons of mayonnaise then place it on top of the lettuce with mayonnaise-side facing down.
Step 7: Cover the top of the bread with potato chips (you can use as many as you want but it’s best to place a single layer for a phenomenal mouth-watering burst of flavor). Top these potato chips off with the already prepared chicken salad and then place the last slice of bread on top.
Step 8: Using a knife or a spatula – whichever you prefer, spread your cream cheese mixture on the top and all sides of your cake in an even manner.
Step 9: Now it’s time to decorate. You can choose to decorate using cucumber slices and radish. If you know how to (or you can simply Google), you can shape your cucumber slices and radish into beautiful designs and press them into the top or sides of your cake for a stunning presentation.
A sandwich cake can be made ahead of time and refrigerated for approximately 1 to 2 hours. You can opt to serve it chilled or at room temperature. This cake is a perfect dish for lunch with friends, and it goes pretty well with a chilled bottle of wine or some cold beers. This recipe can serve up to 12 people, and as you have seen, it is easy to make and a fast fix especially if you have unannounced guests to tend to.
